The entire tour is conducted on the boat, which docks next to the oyster rafts. The guide will demonstrate professional shucking techniques, and visitors can try their hand at shucking. The package includes 12 freshly shucked oysters per person, tasted directly on the boat deck. This activity does not involve getting into the water, and the overall pace is relaxed and gentle, suitable for visitors who only want to observe oyster farming up close and prefer not to get wet; families with children (over 12 years old) also often choose this option.

 


 
② Immerse Yourself|Immersive in-water dining, A$219/adult, 150 minutes (2.5 hours) duration
This is also the most popular and viral experience online. In-water participation is limited to adults aged 18 and above. After the boat reaches a designated shallow area, staff will provide each guest with a waterproof wader suit based on the shoe size registered during booking.

 

 

Once geared up, everyone slowly steps into the river from the boat's side, with the water level just above the calves. Tables draped with white tablecloths are set in the shallow waters of the oyster farming area. Oysters just harvested from nearby rafts, fresh cooked shrimp, and drinks are arranged on the tables. Each person receives 18 freshly shucked oysters. We can shuck the oysters ourselves, add a squeeze of lemon juice, and savor the fresh taste from the estuary beneath our feet while standing in the river.
The farm allows guests to bring their own alcoholic beverages, and glasses will be provided on-site. The trip has a minimum group size. In case of heavy rain or temporary harvesting restrictions in the river, oysters might be sourced from other nearby estuaries. Note that this package does not include dining in the water. After touring the oyster farming area by boat, guests will be taken to a secluded and quiet beach to enjoy an exquisite seafood lunch on the shore, also including 18 oysters per person. This is suitable for visitors who want a relaxed pace, to quietly enjoy the estuary scenery, and do not plan to get into the water.

 


 
Here, you'll primarily taste two types of oysters: Sydney Rock Oysters and Pacific Oysters. Sydney Rock Oysters have a distinct mineral-salty flavor upon tasting, with a rich taste and a long finish, making them a representative native oyster of New South Wales. Pacific Oysters have a sweeter and milder taste, making them more approachable for those new to eating raw oysters. The farm only provides lemon as a basic seasoning and does not prepare Chinese sauces like minced garlic. If you have specific taste preferences, it's recommended to bring your own in advance.
 
After this experience, what impressed me most wasn't just the sweet freshness of the oysters, but witnessing the entire process from estuary farming, fresh harvesting and shucking, to tasting. When we eat oysters at a restaurant, we only get the final product. But standing in the very waters where oysters grow, you can truly understand the unique imprint the environment leaves on seafood.
